🍴 Ingredients

  • 1 can (12 oz) Spam (Classic or Low Sodium), diced into small cubes
  • 3 cups Cooked Jasmine rice (Cold, day-old is mandatory)
  • 2 Large eggs, lightly beaten
  • 1 cup Frozen peas and carrots (thawed)
  • 3 Green onions, sliced (separate the whites and greens)
  • 2 cloves Garlic, minced
  • 2 tbsp Soy sauce
  • 1 tbsp Oyster sauce
  • 1 tsp Toasted sesame oil
  • 2 tbsp Neutral oil (Vegetable or Canola)

1. The Spam Sear

  • Heat a large skillet or wok over medium-high heat. Add the Spam cubes (no oil needed yet, the Spam has plenty!).
  • Fry until the cubes are crispy and golden brown on all sides. Remove them from the pan and set aside on a paper towel.

2. The Egg Scramble

  • Wipe out the pan if there is excess grease. Add 1 tbsp of oil. Pour in the beaten eggs.
  • Scramble them quickly until they are just set but still slightly soft. Remove and set aside with the Spam.

3. The Aromatics

  • Add the remaining 1 tbsp of oil to the pan. Toss in the whites of the green onions, the garlic, and the frozen peas and carrots.
  • Sauté for 2 minutes until the garlic is fragrant and the veggies are hot.

4. The High-Heat Toss

  • Turn the heat to HIGH. Add the cold rice. Use your spatula to break up any clumps.
  • Pour the soy sauce, oyster sauce, and sesame oil over the rice. Toss constantly for 3–4 minutes. You want the rice to “jump” in the pan and start to toast.

  • Fold the Spam and eggs back into the rice. Toss for one more minute to ensure everything is piping hot.
