🍴 Ingredients

  • The “Roast”:
    • 3 lbs Pork shoulder (Boston butt), cut into large chunks
    • 2 tbsp Butter (for searing)
  • The “Slow-Simmer” Aromatics:
    • 1 Large onion (chopped)
    • 2 cloves Garlic (minced)
    • 4 cups Chicken or Beef broth
    • 1 tsp Dried thyme & 1 tsp Dried rosemary
    • Salt & Pepper to taste
  • The “Noodle” Finish:
    • 24 oz Frozen thick egg noodles
    • 1 can (10.5 oz) Cream of Mushroom or Cream of Chicken soup (the “Amish shortcut”)

1. The “Cast-Iron” Start

  • Season the pork chunks generously with salt and pepper.
  • Melt butter in a large skillet over high heat. Sear the pork in batches until browned on all sides. Transfer the pork to the slow cooker.

2. The Deglaze

  • Pour a splash of the broth into the hot skillet, scraping up all the brown bits from the bottom. Pour that liquid over the pork in the slow cooker.

3. The “Long Sleep”

  • Add the onion, garlic, thyme, rosemary, and the rest of the broth to the slow cooker.
  • Cover and cook on Low for 7–8 hours (or High for 4–5 hours) until the pork shreds easily with a fork.

4. The “Shred & Soup”

  • Shred the pork directly in the pot. Stir in the can of cream soup. This acts as a thickener and flavor binder for the noodles.

5. The Noodle “Steep”

  • Add the frozen egg noodles to the slow cooker. Stir them in, making sure they are mostly submerged.
  • Cover and cook on High for 45–60 minutes.
  • The Visual Cue: The noodles should be tender and the sauce should be thick and glossy, clinging to the pork like a blanket.

The “Butter-Parsley” Hack: Just before serving, stir in 2 tablespoons of cold butter and a handful of freshly chopped parsley. The cold butter emulsifies into the hot gravy, giving it a “silky” restaurant finish that contrasts beautifully with the rustic noodles.
