This is a true one-pan meal. It’s affordable, filling, and surprisingly complex thanks to the layering of chili powder and Worcestershire sauce.

🍴 Ingredients
- 1 lb Ground beef (80/20 or lean)
- 1 Large yellow onion, diced
- 1 Green bell pepper, diced
- 2 cloves Garlic, minced
- ¾ cup Uncooked long-grain white rice (not instant)
- 1 can (14.5 oz) Diced tomatoes (with juices)
- 1 cup Water (or beef broth for extra depth)
- 1 tbsp Chili powder
- 1 tsp Worcestershire sauce
- 1 tsp Salt & ½ tsp Black pepper
- Optional: 1 cup shredded Cheddar cheese

1. The Beef & Aromatic Sauté
- In a large skillet with a tight-fitting lid, brown the ground beef, onion, and bell pepper over medium-high heat.
- Break the meat into small crumbles as it cooks. Once the beef is no longer pink and the veggies are soft, drain the excess grease.
2. The Rice Toast
- Add the garlic and the dry rice to the pan.
- Stir constantly for about 2 minutes. You want the rice to look slightly translucent at the edges and smell toasted.
3. The Liquid Marriage
- Stir in the diced tomatoes (with juice), water/broth, chili powder, Worcestershire sauce, salt, and pepper.
- Bring the mixture to a boil, then immediately turn the heat down to low.
4. The Covered Simmer
- Place the lid on tight. Let it simmer undisturbed for 18–20 minutes.
- The “Peek” Rule: Just like the Chicken and Dumplings, don’t lift the lid! You need that steam to cook the rice through.
5. The Final Fluff
- Remove from heat and let it sit for 5 minutes. Remove the lid and fluff with a fork.
- If using cheese, sprinkle it over the top now and replace the lid for 60 seconds until melted.
The “Cast Iron” Bonus: If you make this in a cast iron skillet, don’t stir it too much during the final simmer. You’ll develop a “Socarrat”—a crispy, golden-brown crust of rice at the bottom of the pan that provides a delicious crunch to the meal.
