The “Lone Star” One-Pot Texas Hash

This is a true one-pan meal. It’s affordable, filling, and surprisingly complex thanks to the layering of chili powder and Worcestershire sauce.

🍴 Ingredients

  • 1 lb Ground beef (80/20 or lean)
  • 1 Large yellow onion, diced
  • 1 Green bell pepper, diced
  • 2 cloves Garlic, minced
  • ¾ cup Uncooked long-grain white rice (not instant)
  • 1 can (14.5 oz) Diced tomatoes (with juices)
  • 1 cup Water (or beef broth for extra depth)
  • 1 tbsp Chili powder
  • 1 tsp Worcestershire sauce
  • 1 tsp Salt & ½ tsp Black pepper
  • Optional: 1 cup shredded Cheddar cheese

1. The Beef & Aromatic Sauté

  • In a large skillet with a tight-fitting lid, brown the ground beef, onion, and bell pepper over medium-high heat.
  • Break the meat into small crumbles as it cooks. Once the beef is no longer pink and the veggies are soft, drain the excess grease.

2. The Rice Toast

  • Add the garlic and the dry rice to the pan.
  • Stir constantly for about 2 minutes. You want the rice to look slightly translucent at the edges and smell toasted.

3. The Liquid Marriage

  • Stir in the diced tomatoes (with juice), water/broth, chili powder, Worcestershire sauce, salt, and pepper.
  • Bring the mixture to a boil, then immediately turn the heat down to low.

4. The Covered Simmer

  • Place the lid on tight. Let it simmer undisturbed for 18–20 minutes.
  • The “Peek” Rule: Just like the Chicken and Dumplings, don’t lift the lid! You need that steam to cook the rice through.

5. The Final Fluff

  • Remove from heat and let it sit for 5 minutes. Remove the lid and fluff with a fork.
  • If using cheese, sprinkle it over the top now and replace the lid for 60 seconds until melted.

The “Cast Iron” Bonus: If you make this in a cast iron skillet, don’t stir it too much during the final simmer. You’ll develop a “Socarrat”—a crispy, golden-brown crust of rice at the bottom of the pan that provides a delicious crunch to the meal.
