🍴 Ingredients

  • 1 cup Roasted Green Chiles (chopped; Hatch is preferred)
  • 2 cups Monterey Jack or Sharp Cheddar cheese, shredded
  • 1 cup Cooked ham or crumbled chorizo (optional)
  • 1 cup Milk
  • ½ cup Bisquick (Original Heart Smart or Gluten-Free both work)
  • 3 Large eggs
  • ½ tsp Salt
  • ¼ tsp Cumin
  • ¼ tsp Garlic powder

👩‍🍳 Instructions

1. The Cheese & Chile Bed

  • Preheat your oven to 200°C (400°F). Grease a 9-inch pie plate or tart pan thoroughly.
  • Spread the chopped green chiles and the shredded cheese (and meat, if using) evenly across the bottom of the dish. This ensures every slice has an equal distribution of “heat” and “melt.”

2. The “Impossible” Batter

  • In a blender or a medium bowl, whisk together the milk, Bisquick, eggs, salt, cumin, and garlic powder until completely smooth.

3. The Pour

  • Pour the batter slowly over the cheese and chiles. The liquid will seep into the gaps. Do not stir; let the solids stay at the bottom so the “crust” can form underneath them.

4. The Golden Bake

  • Bake for 35 to 40 minutes. The quiche is done when a knife inserted in the center comes out clean and the top is a beautiful, speckled golden brown.
  • The “Carry-Over” Rest: Let it sit for at least 10 minutes before slicing. This allows the Bisquick “crust” to firm up so the slices come out clean.

The “Santa Fe” Topping: For a truly authentic finish, serve each slice with a dollop of sour cream and a spoonful of fresh salsa verde or a few slices of cool avocado to balance the heat.
