🍴 Ingredients
- The “Crunch” (The Base):
- 9 cups Rice cereal squares (like Chex)
- The “Zesty” Coating:
- 1 ½ cups White chocolate chips (or vanilla melting wafers)
- ¼ cup (½ stick) Unsalted butter
- 2 tbsp Fresh lemon zest (from about 2 large lemons)
- 1 tsp Lemon extract (optional, for extra punch)
- The “Sugar-Dust” Finish:
- 1 ½ cups Powdered sugar
- 2 tbsp Dry lemonade drink mix (powdered)
👩🍳 Instructions
1. The “Cereal-Station”
- Place the rice cereal in a very large mixing bowl. Set aside.
- Line a large baking sheet with parchment paper or wax paper.
2. The “Slow-Melt”
- In a microwave-safe bowl, combine the white chocolate chips and butter.
- Microwave in 30-second increments, stirring in between, until completely smooth.
- The Rule: White chocolate burns easily. Stop as soon as the last few lumps remain and stir them until they melt from the residual heat.
3. The “Zest-Bloom”
- Stir the lemon zest and lemon extract into the warm chocolate.
- The Science: The heat from the chocolate helps release the oils from the zest, “blooming” the flavor so it’s much more intense than just using juice.
4. The “Even-Coat”
- Pour the lemon-chocolate mixture over the cereal. Use a large spatula to fold very gently until every square is covered.
- The Pro Move: Do this slowly so you don’t crush the cereal into crumbs.
5. The “Shake-and-Set”
- Put the powdered sugar and dry lemonade mix into a large gallon-sized Ziploc bag.
- Add the coated cereal to the bag, seal it, and shake vigorously until every piece is snowy white.
- Spread the chow out on your prepared baking sheet to “set” for 20 minutes before serving.
The “Berry-Swirl” Hack: Toss in 1 cup of freeze-dried raspberries or strawberries at the very end. The tart, crunchy berries turn this into a “Strawberry Lemonade” Puppy Chow that looks as beautiful as it tastes.
