  • In a large bowl, cream together the sugar, sour cream, softened butter, and eggs until fluffy.

2. The Fruit & Flour Fold

  • Stir in the mashed bananas and vanilla.
  • Gradually add the flour, baking soda, and salt. The Rule: Do not over-mix! Stir just until the flour streaks disappear to keep the bars light and airy.

  • Spread the batter evenly into the pan.
  • Bake for 20–25 minutes.
