1. The Creamy Start
- Preheat your oven to 190°C (375°F). Grease a 15×10 inch jelly roll pan (or a standard 9×13 inch pan for thicker bars).
- In a large bowl, cream together the sugar, sour cream, softened butter, and eggs until fluffy.
2. The Fruit & Flour Fold
- Stir in the mashed bananas and vanilla.
- Gradually add the flour, baking soda, and salt. The Rule: Do not over-mix! Stir just until the flour streaks disappear to keep the bars light and airy.
3. The “Jelly-Roll” Bake
- Spread the batter evenly into the pan.
- Bake for 20–25 minutes.
- The Visual Cue: The edges should be golden brown and a toothpick should come out clean. Important: Let the bars cool slightly before frosting, but not completely!
4. The Brown-Butter Magic
- In a small saucepan, melt the ½ cup butter over medium heat. Continue cooking, whisking constantly, until the butter turns a deep golden brown and you see little brown specks.
- Immediately remove from heat and whisk in the powdered sugar, vanilla, and milk until smooth.
