🍴 Ingredients
- The “Star”:
- 2 ½ cups Yellow onions (finely diced—don’t use a processor, hand-cut is best)
- The “Golden” Binder:
- ¾ cup All-purpose flour
- ¼ cup Yellow cornmeal
- 1 tbsp Sugar
- 1 tsp Baking powder & 1 tsp Salt
- The “Rich” Wet Mix:
- 1 Large egg
- ½ cup Whole milk
- Black pepper to taste
- The “Frying” Medium:
- Neutral oil (Vegetable or Canola) for shallow frying
👩🍳 Instructions
1. The “Onion-Dry” Prep
- Dice your onions into small, uniform pieces. The Rule: Spread them out on a paper towel for 10 minutes while you prep the batter. Removing surface moisture is the key to the “lace” edge.
2. The “Thick” Batter
- In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, salt, and pepper.
- Add the egg and milk. Whisk until smooth. The batter should be thick enough to coat a spoon heavily.
3. The “Onion-Fold”
- Fold the dried onions into the batter. Every piece of onion should be lightly coated. If it looks like a bowl of onions with just a little “glue,” you’ve done it correctly.
4. The “Sizzle” Fry
- Heat about ½ inch of oil in a heavy skillet (cast iron is ideal) over medium-high heat.
- The Test: Drop a tiny bit of batter in; if it sizzles immediately, you’re ready.
- Drop the batter by the tablespoonful into the oil. Do not crowd the pan. Flatten them slightly with the back of the spoon.
5. The Golden Finish
- Fry for 2–3 minutes per side until they are a deep, “church-social” golden brown.
- Drain on a wire rack (not paper towels!) to keep the bottoms from getting soggy.
The “Buttermilk-Dip” Hack: Serve these with a side of chilled buttermilk ranch or a mixture of sour cream and chives. The cool, tangy dip provides a perfect contrast to the hot, sweet, and savory fried onions.
