This hearty, flavorful casserole is a crowd-pleaser and super easy to make — packed with taco-seasoned beef, veggies, and a creamy biscuit layer that melts in your mouth.

Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped
  • 1 (10-ounce) can diced tomatoes with green chilies (like Rotel), drained
  • 1 packet taco seasoning
  • 1 (8-ounce) can refrigerated biscuits
  • 1 cup sour cream
  • 1 cup mayonnaise

Instructions

Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.

In a large skillet over medium heat, cook the ground beef until browned. Drain the fat.

Add chopped onion and bell pepper to the beef. Cook until softened.

Stir in the diced tomatoes with green chilies and taco seasoning. Let simmer for 5 minutes. Remove from heat.

In a separate bowl, combine sour cream and mayonnaise. Mix until smooth.

Layer the biscuits in the bottom of the greased baking dish.

Spread the meat mixture over the biscuit layer evenly.

Spoon the creamy mayo and sour cream mixture over the top.

Bake uncovered for 30–35 minutes or until the top is lightly golden and the biscuits are cooked through.

Let cool slightly, slice, and serve warm!
