John Wayne Casserole
This hearty, flavorful casserole is a crowd-pleaser and super easy to make — packed with taco-seasoned beef, veggies, and a creamy biscuit layer that melts in your mouth.
Ingredients
- 1 pound ground beef
- 1 medium onion, chopped
- 1 medium bell pepper, chopped
- 1 (10-ounce) can diced tomatoes with green chilies (like Rotel), drained
- 1 packet taco seasoning
- 1 (8-ounce) can refrigerated biscuits
- 1 cup sour cream
- 1 cup mayonnaise
Instructions
• Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
• In a large skillet over medium heat, cook the ground beef until browned. Drain the fat.
• Add chopped onion and bell pepper to the beef. Cook until softened.
• Stir in the diced tomatoes with green chilies and taco seasoning. Let simmer for 5 minutes. Remove from heat.
• In a separate bowl, combine sour cream and mayonnaise. Mix until smooth.
• Layer the biscuits in the bottom of the greased baking dish.
• Spread the meat mixture over the biscuit layer evenly.
• Spoon the creamy mayo and sour cream mixture over the top.
• Bake uncovered for 30–35 minutes or until the top is lightly golden and the biscuits are cooked through.
• Let cool slightly, slice, and serve warm!
