Pecan Pie Cookies

These Pecan Pie Cookies are the perfect bite-sized version of a classic dessert. With a buttery cookie base and a rich, caramelized pecan topping, they deliver all the flavor of pecan pie in a convenient, handheld treat. Crispy on the edges and gooey in the center, they’re irresistible.

Ingredients

For the base:

1/2 cup butter (softened)
1/4 cup brown sugar
1 cup all-purpose flour
For the topping:

1/2 cup chopped pecans
1/3 cup brown sugar
2 tablespoons heavy cream
1 tablespoon butter
1/2 teaspoon vanilla extract
Instructions

Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

In a mixing bowl, combine the softened butter and brown sugar for the base. Mix until smooth and creamy.

Add the flour and mix until a soft dough forms.

Roll the dough into small balls (about 1 inch in size) and place them on the baking sheet. Flatten each slightly with your fingers or the back of a spoon.

In a small saucepan over medium heat, combine the chopped pecans, brown sugar, heavy cream, and butter. Stir continuously until the mixture becomes bubbly and slightly thickened, about 2–3 minutes.

Remove from heat and stir in the vanilla extract.

Spoon a small amount of the pecan mixture onto each cookie base, spreading it gently.

Bake for 10–12 minutes, or until the edges of the cookies are golden and the topping is set.

Allow the cookies to cool on the baking sheet for a few minutes before transferring to a rack.
