🍴 Ingredients

  • The “Enriched” Dough:
    • 3 ½ cups All-purpose flour
    • 1 packet (2 ¼ tsp) Active dry yeast
    • 1 cup Whole milk (scalded and cooled)
    • ½ cup (1 stick) Unsalted butter (melted)
    • ¼ cup Sugar & 1 Egg
  • The “Cream-Cloud” Filling:
    • 8 oz Cream cheese (softened)
    • 1/3 cup Sugar & 1 Egg yolk
    • 1 tsp Vanilla extract & ½ tsp Lemon zest
  • The “Bakery” Glaze:
    • 1 cup Powdered sugar
    • 2 tbsp Milk & ½ tsp Almond extract

👩‍🍳 Instructions

1. The “Yeast-Bloom”

  • Combine the warm milk (must be 110°F/43°C), sugar, and yeast. Let it sit for 5 minutes until foamy.
  • Stir in the melted butter, egg, and flour (one cup at a time) until a soft dough forms. Knead for 5 minutes until smooth. Cover and let rise until doubled (about 1 hour).

2. The “Ring” Shape

  • Punch the dough down and roll it out on a floured surface into a large rectangle (approx. 12×18 inches).
  • Move it to a large parchment-lined baking sheet.

3. The “Filling-Valley”

  • Whisk the cream cheese, sugar, egg yolk, vanilla, and lemon zest until smooth.
  • Spread the filling in a 3-inch wide strip down the center of your dough rectangle.

4. The “Braid” Illusion

  • Cut 1-inch wide strips on the sides of the dough (stopping at the filling). Fold the strips over the filling at an angle, alternating sides to create a “braided” look.
  • Let it rise again for 30 minutes.

5. The “Golden” Bake

  • Preheat your oven to 175°C (350°F).
  • Bake for 25–30 minutes until the dough is deep golden brown and the cream cheese is set.
  • The Rule: Let it cool for 15 minutes before drizzling the almond glaze over the top. If you drizzle while it’s too hot, the glaze will just melt away.

The “Fruit-Jewel” Hack: Before braiding the dough, spread a layer of raspberry or apricot preserves over the cream cheese filling. The bright tartness of the fruit cuts through the richness of the cheese and makes the cross-section look like a stained-glass window.
