1. The “Berry-Shield”
- Preheat your oven to 175°C (350°F). Grease a 9×9 inch square baking pan.
- Place the blueberries in a small bowl and toss with 1 tablespoon of the flour. This “shield” helps them “grip” the batter so they don’t sink.
2. The “Dry-to-Wet” Whisk
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- In a separate jug, whisk the buttermilk, melted butter, eggs, vanilla, and almond extract.

- Pour the wet ingredients into the dry. Stir with a spatula until just combined.
