- Preheat your oven to 175°C (350°F). Sift the cake flour and ½ cup of the sugar together three times. This aerates the flour so it doesn’t crush the egg whites later.
2. The Peaks of Perfection
- In a sparkling clean bowl, beat the egg whites and cream of tartar on medium speed until soft peaks form.
- Gradually add the remaining 1 cup of sugar, one tablespoon at a time, increasing speed to high. Beat until stiff, glossy peaks form (they should stand straight up when you lift the whisk).
3. The Flavor Infusion
- Gently fold in the vanilla and the strawberry puree. Do not over-mix; you want to maintain as much air as possible.
