Ingredients (Serves 4–6)
Pork
- 1–1.2 kg (2½–3 lb) pork loin (not tenderloin)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried thyme or rosemary
- 1 tablespoon olive oil
Honey Garlic Sauce
- ⅓ cup honey
- 4 cloves garlic, minced
- 3 tablespoons soy sauce
- 2 tablespoons ketchup
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- ¼ teaspoon chili flakes (optional)
Instructions
Step 1: Prepare the Pork
Preheat oven to 190°C (375°F).
Pat the pork loin dry. Rub all over with salt, pepper, paprika, and dried herbs.
Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the pork on all sides until nicely browned (about 2–3 minutes per side).
Step 2: Make the Honey Garlic Sauce
In a bowl, whisk together honey, garlic, soy sauce, ketchup, Dijon mustard, apple cider vinegar, and chili flakes.
Step 3: Roast
Pour the sauce over the pork in the skillet, turning to coat.
Transfer the skillet to the oven and roast for 35–45 minutes, basting with sauce every 10 minutes, until the internal temperature reaches 63°C (145°F).
If the sauce thickens too quickly, add a splash of water.
Step 4: Rest & Serve
Remove pork from the oven and let rest for 10 minutes before slicing.
Spoon extra sauce over the sliced pork and serve.
Perfect with:
- Mashed potatoes or roasted baby potatoes
- Steamed green beans or broccoli
- Rice or buttered noodles
- Simple green salad
Tips for Juicy Pork
- Do not overcook—pork loin dries out fast.
