🍴 Ingredients
- 1 cup Blanched almond flour (super-fine is best)
- 1 large Egg
- 1 cup Shredded Mozzarella cheese (the dry kind, not fresh)
- Note: Salt is a freebie, but you’ll want a pinch!

1. The Dough Build
- In a microwave-safe bowl, melt the Mozzarella (about 45–60 seconds).
- Quickly stir in the almond flour and the egg. Mix until a dough ball forms. If it’s too sticky, add one extra tablespoon of almond flour.
2. The Flattening
- Place the dough between two sheets of parchment paper. Roll it out until it is about 1/2 cm (1/4 inch) thick.
- The Chill: Pop the rolled-out dough into the freezer for 15 minutes. This makes it easy to cut into perfect “matchsticks.”
3. The “Fry” Cut
- Use a pizza cutter or a sharp knife to slice the dough into long, thin strips—just like McDonald’s fries.
4. The Crisp
- Air Fryer (Recommended): Place in a single layer at 200°C (400°F) for 8–10 minutes, shaking halfway through.
- Oven: Bake at 200°C (400°F) on a parchment-lined tray for 12–15 minutes until the edges are deep golden brown.
5. The Salt Finish
- Toss with fine sea salt immediately while they are still hot.
The “Parmesan” Secret: For an extra layer of crunch, toss the raw “dough strips” in grated Parmesan before air-frying. The cheese creates a lacy, crispy “skirt” around the fry that is pure heaven.
